Chewy Gingerbread Cookies
Original recipe here: https://krystelscooking.com/recipe/easy-chewy-gingerbread-cookies/
Ingredients
3/4 cup softened butter
2 1/2 cups all-purpose flour
1 cup granulated sugar
1 large egg
1/4 cup unsulphured molasses
2 tsp. baking soda
1 tsp cinnamon
1/2 tsp dried ground ginger
1/2 tsp salt
Granulated sugar for rolling the cookies in
Instructions
Preheat your oven to 350°F.
Start by beating the butter and sugar together until the mixture becomes light and fluffy, which should take about 2-3 minutes with an electric mixer. Then, add the egg and molasses, mixing well until combined.
Mix the flour, baking soda, salt, cinnamon, and ginger in a separate bowl. Gradually add these dry ingredients to the wet mixture, stirring until everything is well incorporated.
Shape or scoop the dough into slightly smaller balls than a golf ball. You can roll the dough balls in granulated sugar for an extra touch. Arrange them on a baking sheet, spacing them about 2-3 inches apart to allow for spreading.
Bake the cookies for 10-12 minutes. Once done, remove them from the oven and let them cool on the baking sheet for about 10 minutes before transferring them to a wire rack to cool completely.
