Chewy Gingerbread Cookies

Ingredients

  • 3/4 cup softened butter

  • 2 1/2 cups all-purpose flour

  • 1 cup granulated sugar

  • 1 large egg

  • 1/4 cup unsulphured molasses

  • 2 tsp. baking soda

  • 1 tsp cinnamon

  • 1/2 tsp dried ground ginger

  • 1/2 tsp salt

  • Granulated sugar for rolling the cookies in

Instructions

  1. Preheat your oven to 350°F.

  2. Start by beating the butter and sugar together until the mixture becomes light and fluffy, which should take about 2-3 minutes with an electric mixer. Then, add the egg and molasses, mixing well until combined.

  3. Mix the flour, baking soda, salt, cinnamon, and ginger in a separate bowl. Gradually add these dry ingredients to the wet mixture, stirring until everything is well incorporated.

  4. Shape or scoop the dough into slightly smaller balls than a golf ball. You can roll the dough balls in granulated sugar for an extra touch. Arrange them on a baking sheet, spacing them about 2-3 inches apart to allow for spreading.

  5. Bake the cookies for 10-12 minutes. Once done, remove them from the oven and let them cool on the baking sheet for about 10 minutes before transferring them to a wire rack to cool completely.
