Japanese Chicken Yakitori Skewers

Ingredients

Sauce

  • 1/2 cup soy sauce

  • 1/2 cup mirin

  • 2 tbsp. brown sugar

Skewers

  • 1 ½ lb. boneless, skinless chicken thighs cut into strips

  • 4 green onions, cut into 1-inch pieces

  • 1 tbsp. canola oil

  • Salt and pepper to taste

Instructions

  1. In a saucepan, combine all sauce ingredients. Cook over low heat and reduce by half, about 15 minutes. Set aside.

  2. Place the grill on the highest oven rack and preheat to broil. Line a baking sheet with aluminum foil.

  3. Thread the chicken strips onto skewers, alternating with pieces of green onion. Spread out on the baking sheet. Brush with oil and season with salt and pepper.

  4. Bake in the oven for 5 minutes. Turn the skewers. Using a pastry brush, baste skewers with sauce. Continue cooking for 2 minutes. Baste skewers again and cook for about 1 minute or until meat is cooked and glazed. Remove from oven and baste once more.

  5. Garnish with toasted sesame seeds and a dash of lime juice. Serve with remaining sauce as a starter or a main with sticky rice and grilled bok choy.
