Crockpot Pot Roast

Ingredients

  • 1 chuck roast

  • Salt

  • Pepper

  • Olive oil

  • Thyme dried and ground

  • Rosemary dried and ground

  • Garlic powder

  • 3 whole carrots

  • 2 1/2 russet potatoes

  • 1 large yellow onion

  • 2 onion soup mix packets

  • 1 cup low-sodium beef broth

  • 3-5 tbs Worcestershire sauce

Instructions

  1. Heat pan with olive oil on medium-high heat.

  2. Get your chuck roast and season all sides lightly with salt, pepper, thyme, rosemary, and garlic powder to taste.

  3. Braise seasoned roast on each side for about 3-5 minutes.

  4. Peel and chop up three whole carrots into about 1-inch pieces.

  5. Chop 2 1/2 russet potatoes into 1-inch pieces.

  6. Cut your yellow onion into six pieces, then separate the layers and saute in the same pan you finished braising your roast in.

  7. Once your roast is braised and your onions are sauteed, put your roast, carrots, potatoes, and onions into a crockpot.

  8. Measure about 1 cup of low-sodium beef broth mix in two onion soup packets, and then add about 3 tbsp of Worcestershire sauce and whisk together in a bowl.

  9. Pour your mixture into the crockpot and then put the crockpot on high to cook your pot roast for about 6 hours until the roast is cooked and the veggies are fork-tender.
