Seafood Stuffed Salmon
Ingredients
1 package of seafood stuffed Atlantic salmon (I got mine from Aldi)
Salt
Pepper
Paprika
Old Bay
1 bundle of asparagus
Pesto (Mine was store bought also from Aldi)
1 lemon
Olive oil
Nonstick cooking spray
Instructions
Preheat your oven at 370F.
Line a baking sheet with aluminum tinfoil and lightly spray with nonstick cooking spray.
Take your salmon filets out of the package and lay them on the greased baking sheet.
Season salmon heavily with Old Bay and paprika. Add salt and pepper to taste.
Snap the stiff ends of your asparagus off and place them onto the baking sheet. Lightly cover them in olive oil, salt, and pepper.
Squeeze lemon over the salmon filets and the asparagus.
Place the baking sheet of seafood-stuffed salmon and seasoned asparagus into the oven for about 30 minutes. Flipping the asparagus halfway through at the 15 minute mark.
Once timer is up take the baking sheet out. Brush the plate with pesto, place the stuffed salmon on top. Place oven-roasted asparagus beside it and top with a slice of lemon for a garnish. Optional: Add more pesto over top of your seafood-stuffed salmon before serving.
